It is indeed a basic preparation that requires a lot of time and effort. Let’s see together, step by step, how to prepare an excellent homemade puff pastry :
-400 gr of flour
-400 g of butter
-¼ l of cold water
-A pinch of salt
-Place the flour in a fountain, put the softened butter in the center and cut into small pieces, add the salt and pour the cold water.
-Knead until the dough is compact and homogeneous.
-Roll out the dough with a rolling pin and make four “turns”, one after the other: one turn consists in spreading the –dough into a rectangle with a not too thin thickness and folding it into a book.
-Repeat the operation four times by pulling the dough in the opposite direction to the fold previously and folding it -back on itself in three parts.
-Between each round, let the dough rest in the refrigerator for about 10-15 minutes.
-When this operation is finished, roll out the dough into a layer of a few millimeters thick and cut it according to the recipe.
